Directions

Braise the beef

  1. Braise the beef with the onion, carrot, parsley, cloves, celery, pepper, salt, and boiling water.

  2. Cover tightly and cook for about 3 hours, adding more boiling water if steam escapes too much.

Make the sauce and serve

  1. Simmer the grated cracker, horseradish, cream, and fat from the beef water for 15 minutes.

  2. Place the beef on a platter, pour the sauce around it, and garnish with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Long, moist braising breaks down connective tissue, leaving the meat tender.
Grated cracker
Thickens the sauce as it simmers, giving it body.
Horseradish
Adds sharp, pungent flavor that cuts the richness of the cream and beef.
Cream
Adds richness and a smooth texture to the sauce.

The step that matters

Covering and adding boiling water during the braise. Tight covering keeps steam and moisture in so the beef cooks gently in liquid. If steam escapes too much, the liquid reduces and the meat can dry out, so the boiling water needs topping up.

Swap the horseradish

How well each one fits the dish's main ingredients (beef, onion, carrot, parsley, clove, celery, pepper):

  1. Turnipfits better
  2. Parsnipfits better
  3. Leekfits better
  4. Horseradishthe original

Fit is the average pairing score against beef, onion, carrot, parsley, clove, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
