What each ingredient does

Small cucumbers
Provide the main crisp, firm pickled vegetable body of the mix.
White cabbage
Adds bulk and crunch that holds its texture through the brining and vinegar.
Cider vinegar
Provides the acidity that preserves and sharpens the pickle flavor.
Black mustard seed
Adds sharp, pungent flavor that develops as the seeds are steeped in vinegar.
White mustard seed
Adds a milder mustard flavor and aroma to the pickled mixture.
Ground mustard
Adds pungency and aroma that blends into the vinegar.

The step that matters

Draining after the brine soak. Brining draws water out of the vegetables, and draining thoroughly before adding vinegar keeps the mixture crisp and stops the pickling liquid from being watered down.
