Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mangoes
Provide the fruit body that is stuffed and pickled, giving the dish its main flavor and texture.
Mustard seed
Supplies sharp, pungent flavor that mellows during pickling.
Cabbage
Adds crunch and bulk to the filling, absorbing the vinegar and spices.
Vinegar
Acidifies the mixture, preserving the vegetables and sharpening the flavor.
Sugar
Balances the sharpness of the vinegar and mustard with sweetness.

The step that matters

Gently scalding the stuffed mangoes. Heating the vinegar too hard or too long can soften the mango flesh until it collapses. Gentle heat lets the acid penetrate and preserve the fruit while keeping its shape and texture.

Swap the mace

How well each one fits the dish's main ingredients (mango, mustard, horseradish, clove, cinnamon, pepper, celery):
