What each ingredient does

Clams
Provide the main seafood flavor and are added late so they do not overcook.
Pork
Adds savory, fatty flavor to the broth as it cooks in the base layer.
Potatoes
Add body and starch, giving the chowder substance and thickening the broth slightly.
Pilot biscuits
Break down into the broth, adding body and thickening the chowder.

The step that matters

Boil rapidly for about 25 minutes. Once the clams and biscuits are added, a rapid boil can toughen clams and break up the potatoes unevenly. Keep the timing in mind so the clams are cooked through but still tender, and the potatoes finish soft.

Swap the tomato

How well each one fits the dish's main ingredients (clam, pork, potato, onion, biscuit, pepper, thyme):

  1. Capsicumfits better
  2. Chivefits better
  3. Mustardfits about as well
  4. Tomatothe original

Fit is the average pairing score against clam, pork, potato, onion, biscuit, pepper, thyme. Candidates are from the same food group and used in at least 100 recipes.
