Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Hop-yeast Bread
Ingredients
Directions
Peel and boil the potatoes, then mash them in the boiling water.
Pour the hot potato mixture into a bread pan with 2 tablespoons of flour, 1 teaspoon of salt, and 1 teaspoon of sugar.
Strain the mixture and add a small cup of yeast when it cools slightly. Set it in a warm place to rise overnight.
In the morning, sift flour into the bread pan, make a hole in the middle, and pour in the yeast mixture.
Add 1 quart of lukewarm water with 1 teaspoon of salt dissolved in it, then stir until stiff enough to knead.
Knead the dough for 15 minutes, then place it in a floured bread pan and cover it with another pan to rise slowly.
If the dough stiffens on top, cover it with a warm, damp cloth.
When the dough has risen, turn it onto a breadboard, knead lightly, shape into a long roll, and cut into loaves.
