Gems and Muffins
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat your oven to 400°F (200°C).
Grease the bottom of each gem pan with a little lard.
Place the gem pans on top of the stove until they are piping hot.
Fill each pan half full of batter while still on the stove.
Immediately transfer the pans to the hot oven.
Bake until the gems rise to about three times their original size, which will take just a few minutes.
Serve the gems immediately after removing them from the oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
