Rice Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Combine rice, milk, and salt in a pot. Steam until rice is soft.

Make the custard

  1. While still hot, stir in beaten egg yolks and powdered sugar. Add vanilla and do not cook further.

  2. Pour mixture into a pudding dish.

Top and bake

  1. Beat egg whites until stiff. Fold in remaining powdered sugar. Spread over rice mixture.

  2. Bake in a 350°F oven until slightly browned.

Serve

  1. Serve cold with tart jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the pudding and soaks up the milk as it steams.
Milk
Provides the liquid base that sets into a soft custard with the eggs.
Eggs
Yolks thicken the custard, and whipped whites form a light topping that sets and browns.
Powdered sugar
Adds sweetness and dissolves easily into the warm custard and the whipped whites.

The step that matters

Stir the beaten yolks into the hot rice mixture without cooking further. Egg proteins thicken gently at moderate heat but scramble if they get too hot. Adding them to a still-hot base and then stopping heat lets the custard set smooth instead of grainy.
