Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut stale bread into thin slices to fit patty pans.

  2. Toast the bread slices.

  3. Butter the toasted bread slices.

  4. Place the buttered bread slices in the patty pans.

  5. Moisten each slice with 3 to 4 teaspoons of oyster liquor.

  6. Cover each slice with oysters.

  7. Sprinkle each slice with pepper.

  8. Add a small piece of butter to each slice.

Bake and serve

  1. Place the pans in a baking pan.

  2. Cover the pans to retain steam and flavor.

  3. Preheat the oven to 400°F (200°C).

  4. Bake for 7 to 8 minutes until ruffled.

  5. Remove the cover.

What each ingredient does

Oysters
Provide the main flavor and tender texture once heated through.
Stale bread
Forms the base that soaks up oyster liquor and butter while crisping.
Butter
Adds richness and helps the bread brown as it toasts and bakes.
Oyster liquor
Moistens the bread and carries the briny oyster flavor into the base.

The step that matters

Covering the pans while baking. The cover traps steam so the oysters cook gently and stay moist, while the bread softens with the liquor. Removing the cover then lets surface moisture evaporate so the edges can firm up.
