What each ingredient does

Strawberries
Provide the fruit flavour and the juice that forms the jelly base.
Sugar
Sweetens the jelly and helps it set when boiled with the juice.

The step that matters

Boil the juice and sugar together thoroughly. Sugar and pectin-containing fruit juice need sustained boiling to reach the concentration required for the mixture to gel when cooled. Under-boiling can leave the jelly runny.
