Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rump beef
Pounding and long stewing soften the tough muscle into tender meat.
Melted butter
Coats the meat and helps it brown and carry flavor during frying.
Soup stock
Provides the liquid in which the beef stews and becomes the base of the sauce.
Flour
Thickens the stock into a smooth, lightly bodied sauce.

The step that matters

Frying until browned. Browning the meat over good heat creates flavorful compounds through the Maillard reaction. Crowding or insufficient heat leaves the meat grey and steaming, which yields a blander stew.

Swap the onion

How well each one fits the dish's main ingredients (beef, pork, butter, flour):

  1. Potatofits better
  2. Onionthe original
  3. Chivefits about as well
  4. Leekfits about as well

Fit is the average pairing score against beef, pork, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
