What each ingredient does

Quail
Provides the main meat, which cooks through over direct heat and stays moist when basted with butter.
Butter or lard
Adds fat for moisture and flavour, and helps the quail brown while broiling.
Coarse sea salt
Seasons the birds and, in the soaking step, helps season the meat from within.
Bread
Forms a buttered base that soaks up drippings and gives the dish a crisp, savoury foundation.

The step that matters

Turning and basting the quail while broiling. Turning often and dipping in melted butter keeps the surface from drying or scorching while the fat promotes even browning and moisture in the small birds.
