Breast of Lamb Roasted

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wipe the breast of lamb carefully on a board.

  2. Prepare a dressing by mixing bread crumbs with salt and spices to taste.

  3. Fill the breast of lamb with the dressing, roll it up, and tie it securely.

Brown and bake

  1. Brown the rolled lamb in hot butter.

  2. Place it in a dripping pan with a little hot water.

  3. Sprinkle with flour and salt, cover with an inverted pan, and bake at 300°F (150°C) until done.

  4. Alternatively, cook in an iron pot on the stove.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb breast
Forms the main body of the dish, becoming tender and juicy as it cooks slowly.
Bread crumbs
Make up the dressing that fills the roll, absorbing juices and adding a soft texture.
Butter
Browns the outside of the rolled lamb, adding color and rich flavor.
Flour
Sprinkled on the outside, it helps the surface brown and form a light crust.

The step that matters

Browning the rolled lamb in hot butter. Browning the outside before baking builds deep flavor and color through the Maillard reaction. Pat the lamb dry first, since surface moisture steams the meat instead of browning it.
