Lambs Tongues Boiled

Ingredients

Directions

  1. Wash the lambs' tongues and drop them into cold salted water.

  2. Boil slowly for 2 hours until tender.

  3. Remove the skins and place the tongues on a hot platter.

  4. Make a gravy with some of the cooking liquid by thickening it with flour and adding pepper; pour over the tongues.

  5. For a stew, use the remaining cooking liquid, heat it, and add sliced onion, potato, carrot, turnip, sweet herbs, and celery.

  6. Cook the vegetables until half done, then rub equal amounts of butter and flour together, add to the stew with the tongues, season, and let simmer gently until done.
