Ingredients

Directions

Prepare

  1. Slice the tomatoes and onions, and layer them in a jar, sprinkling with salt. Let stand for 24 hours.

  2. Drain the vegetables and boil them for 20 minutes in 2 quarts of water and 1 quart of vinegar, then drain again.

Make the pickle

  1. Place the mustard seed, sugar, and spices tied in a bag into the vinegar. When hot, add the pickles and boil for 15 minutes, or until clear and tender.

What each ingredient does

Green tomatoes
Form the bulk of the pickle and soften to a tender texture during boiling.
Onions
Add bulk and sweetness while softening into the pickle.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Brown sugar
Balances the sharpness of the vinegar with sweetness and depth.
White mustard seed
Adds a pungent, slightly bitter flavor that deepens during cooking.

The step that matters

Drain the salted vegetables before boiling. Salting draws out water, and draining removes excess salt and moisture. Skipping this leaves the pickle overly salty and diluted, and prevents the vinegar mixture from being absorbed properly.

Swap the onion
