Cottage Cheese

Ingredients

Directions

Make the curd

  1. Let the milk stand for 24 to 48 hours until it becomes curd.

  2. Place it on the back of the stove, ensuring it does not get too warm.

  3. Wait until the whey rises to the top and the curd begins to crack.

Drain and finish

  1. Pour the curd into a coarse muslin or cheese-cloth bag and tie it securely.

  2. Hang the bag to drip and catch the whey in a pan.

  3. Once it stops dripping, remove the bag and mix the curd with salt, butter, and enough sweet cream to soften it.

  4. Serve very cold, either in a mass or formed into soft balls.

What each ingredient does

Milk
Sours and sets into the curd that forms the cheese.
Butter
Adds fat for richness and a softer, smoother texture.
Sweet cream
Adds moisture and fat, softening the drained curd.

The step that matters

Keep the curd from getting too warm on the stove. Gentle warmth lets the curd separate cleanly from the whey. Heat that is too high can toughen the curd and make it greasy or rubbery.
