What each ingredient does
- Veal knuckle
- Bones and meat release gelatin and flavor into the water during long simmering.
- Old fowl
- Adds deep savory flavor and body to the stock during long simmering.
- Carrots
- Contribute sweetness and aromatic flavor to the stock.
- Celery
- Adds aromatic, savory flavor to the stock.
The step that matters
Cook gently after the initial simmer. Keeping the stock at a gentle simmer rather than a hard boil keeps it clear, since vigorous boiling emulsifies fat and clouds the liquid.
Swap the mace
How well each one fits the dish's main ingredients (veal, carrot, celery, clove, pepper, parsley, tomato):
- Thymefits better
- Marjoramfits better
- Basilfits better
