Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shin bone
Releases collagen and flavor into the water as it cooks slowly, giving the soup body.
Potatoes
Starchy vegetable that softens during cooking and thickens the soup slightly as it breaks down.
Flour
Mixed with cold water first, it thickens the broth as it heats without forming lumps.

The step that matters

Adding the flour mixture. Flour must be mixed smooth with cold water before it goes into the hot soup, because dry flour added directly clumps and forms lumps that do not dissolve evenly.

Swap the tomato

How well each one fits the dish's main ingredients (carrot, turnip, celery, onion, parsley, potato, pepper):

  1. Parsnipfits better
  2. Leekfits better
  3. Okrafits better
  4. Tomatothe original

Fit is the average pairing score against carrot, turnip, celery, onion, parsley, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
