Ingredients

Directions

  1. Cut up the chicken or rabbit and place it with the veal, 1 onion, half the carrot, cloves, and parsley into the cold water.

  2. Cook slowly until the chicken is nearly done, then remove the chicken and let the veal simmer until fully cooked.

  3. In a separate pan, fry the remaining onion, the other half of the carrot, and the celery in butter until browned.

  4. Add the flour to the pan and cook for 2 minutes, then stir in the curry and the trimmed chicken pieces.

  5. Pour in the veal broth and cook gently for 1 hour.

  6. Season with salt, pepper, and a little juice of lemon or mango pickle.

  7. Skim, strain, and serve with boiled rice.
