Rhubarb Tart

Ingredients

Directions

  1. Remove the thin skin from the rhubarb stalks and cut them into 4-5 inch lengths.

  2. Place the rhubarb in a dish and cover with a thin syrup made from sugar and water.

  3. Cover with another dish and let it simmer slowly for 1 hour on a hot hearth or in a block-tin saucepan.

  4. Once cooled, prepare the rhubarb into a tart.

  5. If desired, cut the rhubarb into small pieces the size of gooseberries and make the tart as you would a gooseberry tart.
