Tarts of Preserved Fruits

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Cover patty pans or shallow tins with light puff paste.

  3. Fill the pastry with your choice of preserved fruits.

  4. Top with light cross bars of puff paste or decorative shapes like stars, leaves, or flowers.

  5. For delicate preserves, bake the pastry first, then add the preserves and decorate with baked leaves.

  6. Return to the oven to finish baking if necessary.
