Ingredients

Directions

  1. Dip whole potatoes in boiling water for 1-2 minutes to kill the germ near the skin.

  2. Dry the potatoes in a warm oven.

  3. Store the dried potatoes in sacks or casks in a dry place, protected from frost.

  4. Alternatively, peel and grate the potatoes into a pulp.

  5. Squeeze out the water using coarse cloths and a press to form flat cakes.

  6. Dry the cakes thoroughly and store for later use.

  7. Optionally, add a piece of lime to the boiling water to improve texture.
