Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

To Roast a Turkey

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Hang the turkey in the air for 24 hours after cleaning.

  2. Mix bread crumbs, butter, celery seed, salt, black pepper, and beaten eggs for stuffing.

  3. Plump out the breast of the turkey thoroughly.

Roast

  1. Place the turkey in a roasting pan with enough water to steam it well.

  2. Dredge and baste the turkey regularly.

  3. Bake a 15-pound turkey for 3 hours in a slow oven at 300°F (150°C) to ensure it is fully cooked.

What each ingredient does

Bread crumbs
Provides the bulk and structure of the stuffing.
Butter
Adds fat for richness and moisture in the stuffing.
Eggs
Bind the stuffing together and set as it cooks.
Celery seed
Adds a savoury, aromatic flavour to the stuffing.

The step that matters

Bake a 15-pound turkey for 3 hours in a slow oven at 300°F (150°C) to ensure it is fully cooked.. Poultry is only safe to eat when its thickest parts reach a fully cooked temperature. A slow oven heats the bird gently so the centre cooks through while the outside stays moist rather than drying out.

Swap the celery

How well each one fits the dish's main ingredients (bread, butter, pepper, egg):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Sagefits better
  4. Celerythe original

Fit is the average pairing score against bread, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
