Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and dissolves in the milk, thickening the pudding and giving it its body.
Milk
Forms the liquid base that the tapioca thickens and the custard sets within.
Egg yolks
Thicken the mixture into a custard and add richness as they cook.
Egg whites
Folded in beaten, they add lightness and a frothy texture to the pudding.
Sugar
Sweetens the pudding and helps tenderize the egg yolk custard.

The step that matters

Boil until the mixture thickens to custard consistency. Egg yolks thicken only when heated gently, and overheating can curdle them. Stir steadily and watch for thickening so the custard stays smooth.
