Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream together the butter and sugar until light and fluffy.

  2. Add the egg yolks and beat well.

  3. Fold in the chopped damsons and vanilla.

  4. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold into the mixture.

Bake

  1. Pour the mixture into a prepared puff pastry shell.

  2. Bake at 350°F (175°C) until set and golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving a light, tender texture and rich flavour.
Sugar
Sweetens the pudding and helps the creamed butter hold air for lightness.
Eggs
Yolks enrich and bind the mixture; whipped whites add lift and help it set.
Preserved damsons
Add fruity sweetness and acidity, moisture, and a jammy flavour through the pudding.
Puff pastry
Forms a crisp, flaky shell that holds the filling and browns during baking.

The step that matters

Folding in the egg whites. Whites beaten to stiff peaks hold the batter's air. Stirring them in roughly or too vigorously knocks that air out, so the pudding bakes denser and flatter.
