Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 350°F (175°C).
In a large bowl, combine veal, salt pork, cracker crumbs, nutmeg, eggs, pepper, salt, mace, parsley or sage, lemon peel, and lemon juice. Mix well until all ingredients are combined.
Bake and serve
Transfer the mixture to a loaf pan and dot the top with butter.
Bake for 1 hour or steam for 3 hours, wrapped closely in a cloth.
Let cool slightly before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal
- Forms the main body of the loaf and gives it its meaty structure.
- Eggs
- Bind the mixture together and help the loaf set as it cooks.
- Cracker crumbs
- Absorb moisture and help the loaf hold its shape when sliced.
- Salt pork
- Adds fat and richness, keeping the lean veal moist during cooking.
The step that matters
Bake for 1 hour or steam for 3 hours. Veal is lean and dries out easily, and the eggs must set fully. Cooking gently at a steady heat, and covering the loaf when steaming, keeps the texture moist and firm rather than dry or crumbly.
Swap the mace
How well each one fits the dish's main ingredients (veal, pork, nutmeg, egg, pepper, parsley, lemon):
- Marjoramfits better
- Thymefits better
- Sagefits better
- Macethe original
Fit is the average pairing score against veal, pork, nutmeg, egg, pepper, parsley, lemon. Candidates are from the same food group and used in at least 100 recipes.
