Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble the pie

  1. Line a pan with pastry.

  2. Fill with disjointed pieces of chicken and strips or squares of dough.

  3. Sprinkle with pepper and coarse sea salt.

  4. Sift in a little flour and add small pieces of butter.

  5. Cover the top with pastry, leaving a slit in the center.

  6. Fill the pan with water.

Bake and serve

  1. Bake at 400°F (200°C) for 1.5 hours.

  2. Just before serving, fill the pan again with water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the cooking liquid into a light sauce around the chicken.
Butter
Adds richness and moisture as it melts into the filling.
Pastry
Forms a crust that encloses the filling and holds in moisture while baking.
