Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Provides the sweetness and the bulk that cooks down into the chewy candy mass.
Vinegar
Acidity helps prevent sugar from crystallizing, keeping the taffy smooth rather than grainy.
Butter
Adds fat that softens the texture and gives the taffy a richer mouthfeel.

The step that matters

Testing the thickness in cold water. Sugar syrup must reach the right concentration before it is removed from heat. Cooking too little leaves the taffy sticky and soft, while cooking too long makes it hard, so checking a drop in cold water helps judge when it is ready.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar, butter):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Apricotfits about as well
  4. Peachfits about as well

Fit is the average pairing score against sugar, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
