Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Boil the chicken and sweetbreads until cooked.

  2. Let the boiled chicken and sweetbreads cool.

  3. Cut the chicken and sweetbreads into pieces as for a salad.

Make the cream sauce

  1. Heat the cream over medium heat in a saucepan.

  2. Melt the butter in another pan.

  3. Stir in the flour until smooth.

  4. Pour the melted butter and flour mixture into the hot cream, stirring until thickened.

  5. Add the grated onion, nutmeg, black pepper, and red pepper to the cream sauce.

Assemble and bake

  1. Combine the chicken, sweetbreads, and mushrooms in a baking pan.

  2. Pour the cream sauce over the mixture.

  3. Cover the mixture with bread crumbs.

  4. Dot the top with butter pieces.

  5. Bake at 400°F (200°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the butter and cream into a smooth, stable sauce.
Cream
Forms the rich, smooth base of the sauce and adds moisture.
Butter
Adds richness and carries the flour so it can thicken the sauce evenly.
Bread crumbs
Form a crisp, golden browned crust over the baked mixture.

The step that matters

Stirring the flour and butter into the hot cream. Adding the roux to hot cream while stirring keeps lumps from forming, so the sauce thickens smoothly rather than clumping.
