Why it works: Onion and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓

Potted Beef

Ingredients

Directions

Prepare

  1. Have your butcher saw the fore shank of beef instead of chopping it to avoid small bones.

  2. Place the beef in a pot with enough cold water to cover it and bring to a boil.

  3. Boil until the meat falls off the bone, then remove the beef and save the water.

  4. Chop the meat into half-inch pieces and skim the boiled water before returning the meat to the pot.

Make the potted beef

  1. Add the chopped onion, parsley, garlic, rolled bread, cayenne pepper, and salt to the pot.

  2. Mix thoroughly and simmer for 3 to 4 hours, stirring occasionally.

  3. Transfer the mixture to glasses or cups and store in a cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fore shank of beef
Provides the meat and collagen that break down into the rich body of the dish.
Bread
Soaks up cooking liquid and helps thicken the mixture into a spreadable texture.
Onion
Adds sweetness and savory depth as it softens during the long simmer.
Garlic
Contributes pungent aroma that mellows during the long simmer.

The step that matters

Simmering for 3 to 4 hours. Long, gentle simmering breaks down collagen in the shank into gelatin, which gives the mixture its body. Too little time leaves it tough and loose, and boiling hard can make it cloudy and dry.

Swap the parsley

How well each one fits the dish's main ingredients (beef, onion, garlic, bread, pepper):

  1. Parsleythe original
