Mock Smelts

Ingredients

Directions

Make the noodle dough

  1. Make noodle dough by beating together eggs, salt, and enough flour to form a stiff dough.

  2. Cut the dough into four pieces and roll out each piece thinly.

  3. Spread the rolled dough on paper to dry, then roll it up.

  4. Using a sharp knife, shave the roll into thin rings.

Cook and serve

  1. Boil the rings in water for 5 minutes.

  2. In a frying pan, brown the bread crumbs in butter.

  3. Skim the mock smelts into the browned crumbs.

  4. Pour the milk over the mixture and heat until warm, then serve.
