Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Beat the egg whites, water, and salt until stiff peaks form.

Make the batter

  1. Sift the flour three to four times.

  2. Gently fold in the sugar, vanilla extract, and cream of tartar.

  3. Pour the batter into ungreased cake tins.

Bake and cool

  1. Bake for no more than 30 minutes.

  2. Invert the tins immediately after removing from the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that gives the cake its airy, light structure.
Flour
Provides the framework that holds the set cake's shape once baked.
Sugar
Sweetens the cake and helps stabilise the whipped egg white foam.
Cream of tartar
Acidifies the egg whites, helping the foam stay stable and hold its volume.

The step that matters

Invert the tins immediately after removing from the oven.. The cake's delicate foam structure is still setting and hot when it leaves the oven. Hanging the tins upside down lets gravity and cooling hold the crumb stretched, so it does not collapse and shrink.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, flour, sugar, cream):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, flour, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
