Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a saucepan, combine the sweet milk and grated chocolate; heat until warm but do not boil.

  3. Remove from heat and stir in the sugar and egg yolks.

  4. Add vanilla and mix well.

  5. Pour the mixture into the pie crust and bake for 25‑30 minutes.

Top and finish

  1. While baking, beat the egg whites with powdered sugar until stiff peaks form.

  2. Spread the meringue over the pie and return to the oven until lightly browned.

  3. Cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet milk
Forms the liquid base of the custard filling, giving it body and creaminess.
Egg yolks
Thicken the custard filling and add richness.
Egg whites
Whipped into stiff peaks to form the meringue topping, which gives a light, airy layer.
Grated sweet chocolate
Provides the chocolate flavor and color of the filling.
Sugar
Sweetens the filling and helps stabilize the custard.

The step that matters

Heat the milk without boiling. Heating the milk and chocolate gently until warm keeps the egg yolks from scrambling when added, so the custard stays smooth and silky.
