Ingredients

Directions

Prepare the pudding

  1. Soak the tapioca in cold water overnight.

  2. Boil the soaked tapioca with the milk in a double boiler for 10 minutes.

  3. Remove the mixture from heat.

  4. Quickly stir in the beaten egg yolks and sugar, and cook for 5 minutes to prevent curdling.

  5. Add vanilla or lemon extract for flavor.

  6. Pour the mixture into a pudding dish.

Top with meringue and serve

  1. Make a meringue by beating the egg whites with 1 teaspoon of sugar until stiff peaks form.

  2. Spread the meringue on top of the pudding.

  3. Serve cold.

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and soft, slightly chewy texture.
Milk
Forms the liquid base that the tapioca thickens into a creamy pudding.
Egg yolks
Enrich and thicken the custard, adding richness and smoothness to the pudding.
Egg whites
Whipped into a meringue that forms the light, airy topping on the pudding.
Sugar
Sweetens the pudding and helps stabilize the beaten egg white meringue.

The step that matters

Stirring the egg yolks into the hot mixture. Egg yolks scramble and curdle if they meet too much heat too fast. Removing the pan from heat first and stirring quickly spreads the yolks through the mixture so they thicken it smoothly.
