Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Rub the fish inside and out with coarse sea salt, black pepper, and a pinch of cayenne pepper.

  2. Prepare a stuffing by seasoning the cubed bread with pepper, salt, and thyme or parsley.

  3. Stuff the fish and sew it closed or tie it with string.

Bake

  1. Place the fish in a pan and add 1 pint of water.

  2. Sprinkle the fish with flour and add some butter on top.

  3. Baste the fish well and bake at 300°F (150°C) for 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Cubed bread forms the stuffing, soaking up juices and adding body inside the fish.
Butter
Butter basted over the fish adds richness and helps the surface brown and stay moist.
Flour
A light flour dusting on the fish can help the surface brown and form a slightly thickened coating.

The step that matters

Basting the fish during baking. Fish has little connective tissue and cooks quickly, so it can dry out. Regular basting with butter and pan liquid keeps the surface moist and helps it brown evenly.

Swap the thyme

How well each one fits the dish's main ingredients (fish, pepper, bread, flour, butter):

  1. Parsleyfits better
  2. Capersfits better
  3. Nutmegfits about as well
  4. Thymethe original

Fit is the average pairing score against fish, pepper, bread, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
