What each ingredient does

Tomatoes
Provide the main body, flavour and bulk of the ketchup.
Vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Brown sugar
Adds sweetness that balances the acidity of the tomatoes and vinegar.
Onions
Add savoury depth and aroma as they cook down into the sauce.

The step that matters

Boil the tomato mixture for 2 hours. A long, steady boil reduces the water in the tomatoes and concentrates their flavour, while the vinegar's acidity helps preserve the finished sauce. Too short a boil leaves the ketchup thin and less stable.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, clove, allspice, onion, sugar, garlic, vinegar):

  1. Mustardfits better
  2. Capsicumfits better
  3. Horseradishfits better
  4. Tomatothe original

Fit is the average pairing score against pepper, clove, allspice, onion, sugar, garlic, vinegar. Candidates are from the same food group and used in at least 100 recipes.
