What each ingredient does

Green tomatoes
Provide the bulk and tart, acidic body of the salad.
Cabbage
Adds crisp texture and bulk that holds up during slow cooking.
Sugar
Adds sweetness that balances the vinegar and tartness of the tomatoes.
Vinegar
Supplies acidity that preserves the vegetables and sharpens the flavor.
Onions
Contribute pungent flavor and aromatic depth to the mixture.
Mixed mustard
Adds sharp, pungent flavor that complements the spices.

The step that matters

Strain the salted tomatoes. Salt draws water out of the chopped green tomatoes. Discarding that liquid keeps the salad from becoming watery and dilute once it is cooked and combined.
