What each ingredient does

Irish potatoes
Starch and moisture that give the dough a soft, tender crumb.
Flour
Provides the gluten structure that holds the dough together and lets it rise.
Quick yeast
Produces gas as it ferments, causing the dough to rise and become light.
Lard
Adds fat that tenderizes the crumb and softens the texture.

The step that matters

Let the sponge ferment before adding more flour. The yeast needs time to multiply in the warm, moist potato mixture before the dough is shaped. Rising too little leaves the bread dense, while the dough should be left to rise until light before baking.

Flavor stand-ins for the potato

How well each one fits the dish's main ingredients (flour, almond):

  2. Kalebetter flavor fit
  3. Beetrootbetter flavor fit
  4. Potatothe original

Fit is the average pairing score against flour, almond. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
