Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat sugar and butter until creamy.

  3. Add the 6 egg yolks and wine, mixing well.

  4. Stir in the grated nutmegs.

Make the meringue and bake

  1. Whip the remaining egg whites to form a meringue.

  2. Fold the meringue into the pudding mixture.

  3. Pour the mixture into a baking dish and bake until set.

Finish

  1. Once baked and cooled, spread icing on top and brown it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and help set the custard, while whipped whites add lightness and structure.
Butter
Adds fat for richness and a tender, smooth texture.
Sugar
Sweetens the pudding and creams with butter to give a smooth base.
Wine
Adds moisture and flavour to the batter.
Nutmeg
Contributes a warm, aromatic flavour.

The step that matters

Folding in the meringue. The whipped whites trap air that gives the pudding its lift and light texture. Folding gently keeps that air in; stirring hard deflates the meringue and leaves a denser result.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, butter, wine):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Tarragonfits less well
  4. Thymefits less well

Fit is the average pairing score against egg, sugar, butter, wine. Candidates are from the same food group and used in at least 100 recipes.
