Apple Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the filling

  1. In a bowl, mix the stewed and strained apples with sugar and butter until well combined.

  2. Add the 3 whole eggs and mix thoroughly.

  3. Pour the mixture into a prepared pastry crust.

Bake and top

  1. Bake in the preheated oven until set and golden.

  2. Whip the reserved egg whites until stiff peaks form and spread over the pudding.

  3. Return to the oven and bake until the meringue is lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stewed and strained apples
Provide the main body and moisture of the pudding filling.
Sugar
Adds sweetness and helps the filling brown lightly in the oven.
Butter
Adds fat for a rich, tender texture in the filling.
Eggs
Set the filling into a firm custard-like texture as it bakes.
Egg whites
Whipped into a foam that forms the light, browned meringue topping.

The step that matters

Whipping the egg whites to stiff peaks. Egg whites must be whipped until stiff peaks form, because the trapped air creates the foam that holds the meringue's volume. Under-whipped whites will weep or collapse on the pudding.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, egg):

  1. Vanillafits better
  2. Lemonfits better
  3. Raisinfits better
  4. Applethe original

Fit is the average pairing score against sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
