Ingredients

Directions

Prepare the tapioca

  1. Soak the tapioca in warm water for 3 to 4 hours after washing it thoroughly.

Make the pudding

  1. Combine the soaked tapioca, sweet milk, beaten egg yolks, sugar, salt, and nutmeg in a pan.

  2. Set the pan in another pan of boiling water on the stove.

  3. Cook the mixture until it thickens like custard.

  4. Transfer the mixture to the oven with something underneath to prevent scorching.

  5. Let the mixture dry on top.

Top and brown

  1. Prepare a meringue with the egg whites and flavor to taste.

  2. Pour the meringue on top of the pudding.

  3. Smooth the meringue out.

  4. Brown the meringue slightly in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and soft, chewy texture.
Egg yolks
Enrich and thicken the custard, adding richness and smoothness to the pudding.
Egg whites
Whipped into the meringue, they form a light foam that sets and browns on top.
Sweet milk
Forms the liquid base that the tapioca swells in and the eggs set into custard.
Sugar
Sweetens the pudding and contributes to browning of the meringue topping.

The step that matters

Cook the mixture until it thickens like custard. Tapioca starch swells and thickens as it heats, and the egg yolks set with it. Stopping too early leaves the pudding thin, while overcooking can curdle the eggs or scorch the bottom of the pan.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
