Meringue Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry and place it in a pie pan.

  3. Bake the pastry until golden brown.

  4. Fill the baked pastry with quince marmalade.

  5. Whip the egg whites until stiff peaks form, then gradually add sugar until glossy.

  6. Spread the meringue over the marmalade and brown slightly in the oven.
