What each ingredient does

Strawberries
Provide the flavour and colour of the juice.
Tartaric acid
Adds sharpness that balances the sweetness of the sugar.
Powdered sugar
Sweetens the juice and dissolves into it for a smooth drink.

The step that matters

Letting the strawberries stand for 48 hours. The acid must draw out flavour and colour from the fruit over the full standing time. Straining too early leaves a weak, pale juice, and the sugar must be added only to clear juice so it dissolves fully.
