Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef steaks
Release juices and collagen that form the body and savory depth of the gravy.
Veal knuckle
Adds gelatin from bone and connective tissue, giving the gravy a richer, silkier body.
Onions
Caramelize on the bottom of the pan, adding sweetness and deep color to the gravy.
Carrots
Contribute natural sweetness and aromatic depth to the simmering liquid.

The step that matters

Cooking until the bottom is nearly black. Browning the meat and vegetables on the pan bottom builds deep, roasted flavor and color through the Maillard reaction and caramelization. Stopping too early leaves the gravy pale and flat, while pushing past near-black risks bitter, burnt notes.

Swap the clove

How well each one fits the dish's main ingredients (beef, veal, carrot, onion, parsley):

  1. Celeryfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against beef, veal, carrot, onion, parsley. Candidates are from the same food group and used in at least 100 recipes.
