What each ingredient does

Giblets
Provide the main meat and flavour, becoming tender when stewed slowly in liquid.
Butter
Fat that is cooked with the flour to form a roux, thickening the soup and adding richness.
Flour
Thickens the soup when cooked in melted butter, giving it body and a smooth texture.
Madeira
Adds sweetness and a rich, aromatic wine flavour at the end of cooking.
Lemon juice
Adds acidity that brightens the flavour of the rich soup.

The step that matters

Stir in flour until brown. Flour cooked in butter forms a roux that thickens the soup. Stirring keeps it from scorching and lumping, and it should not burn, since scorched flour tastes bitter.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, onion, lemon, butter, flour, pepper, mushroom):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. White pepperthe original

Fit is the average pairing score against beef, onion, lemon, butter, flour, pepper, mushroom. Candidates are from the same food group and used in at least 100 recipes.
