What each ingredient does

Chicken
Provides the meat and bones that flavour the long-simmered soup broth.
Butter
Browns the chicken, building savoury, roasted flavour in the base of the soup.
Sassafras leaves
Ground leaves that thicken the soup and add their distinctive aroma when stirred in near the end.
Bacon
Adds smoky, salty fat that enriches the flavour of the soup.
Onion
Adds sweetness and aromatic depth as it softens during the long stew.

The step that matters

Adding the sassafras leaves. Sassafras powder thickens soup when stirred in and can turn stringy or clumpy if boiled. Mixing it with some warm soup first and adding it off the heat or at a gentle simmer helps it disperse evenly and keeps the texture smooth.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, butter, onion):

  1. Garlicfits better
  2. Thymefits better
  3. Capersfits about as well
