What each ingredient does

Beef kidneys
Form the main body of the dish, becoming tender when sliced thin and quickly fried.
Madeira wine
Deglazes the pan and adds a sweet, fortified depth to the sauce.
Butter
Enriches the sauce with fat, adding richness and a smooth, glossy finish.
Lemon juice
Adds acidity that brightens the rich kidneys and wine sauce.
Shallot
Contributes a mild, sweet onion aroma that is softened by the cooking.

The step that matters

Fry over high heat until browned on both sides. High heat browns the slices quickly through the Maillard reaction, building flavour before the kidneys toughen. Overcooking at lower heat or for too long leaves them dry and rubbery.

Swap the nutmeg
