What each ingredient does

Beef rump
Long, gentle simmering breaks down connective tissue, leaving the meat tender and moist.
Broth
Forms the liquid base of the stew and carries the flavour of the dish.
Flour
Thickens the cooking liquid into a gravy with body.
Lemon
Adds bright acidity and aroma that balance the rich, savoury gravy.
Madeira, sherry, or port
Adds depth, sweetness and wine flavour to the finished gravy.

The step that matters

Simmering the beef gently for 2 hours. A rolling boil toughens meat and can leave it dry, while a gentle simmer slowly converts collagen into gelatin, which makes the beef tender and gives the gravy body.
