Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of beef
Its bone and meat release gelatin and flavour into the water as it simmers.
Water
Acts as the cooking liquid that extracts flavour from the beef and bones.
Bread crust
Adds a subtle toasted aroma and body to the broth.
Toasted bread
Soaks up broth, giving the served dish a softer, more substantial texture.

The step that matters

Skim the water after adding the beef. Skimming removes coagulated proteins and fat that rise to the surface during heating, keeping the broth clear and clean-tasting.

Swap the mace

How well each one fits the dish's main ingredients (beef, parsley, bread):

  1. Marjoramfits better
  2. Thymefits better
  3. Pepperfits better
  4. Macethe original

Fit is the average pairing score against beef, parsley, bread. Candidates are from the same food group and used in at least 100 recipes.
