What each ingredient does

Veal knuckle
Provides collagen and meat that break down into a rich, body-giving broth during long simmering.
Onion
Adds aromatic sweetness and savory depth to the broth as it cooks.
Burnt crust of bread
Contributes a toasty, slightly smoky colour and flavour to the stock.

The step that matters

Simmer gently for at least 2 hours. A rolling boil makes the broth cloudy and can toughen the meat, while a gentle simmer lets collagen slowly dissolve into gelatin, giving a clear, rich gravy.

Swap the mace

How well each one fits the dish's main ingredients (veal, thyme, onion, pepper, bread, lemon):

  1. Marjoramfits better
  2. Parsleyfits better
  3. Sagefits better
  4. Macethe original

Fit is the average pairing score against veal, thyme, onion, pepper, bread, lemon. Candidates are from the same food group and used in at least 100 recipes.
