Why it works: Capsicum and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,571 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Galantine Veal
Ingredients
Directions
Remove the chine bone, tendons, and rib bones from the veal breast and flatten it.
Spread the forcemeat evenly over the veal.
Arrange lines of gherkins, capsicums, ham or bacon, hard-boiled yolks, and truffles on top.
If available, sprinkle boiled calves' feet and pieces of fowl over the filling.
Season with pepper and coarse sea salt.
Roll the veal tightly and wrap it in a cloth, tying it securely.
Stew the wrapped veal for at least 2 hours.
Remove from the pot, press it flat, and let it cool completely.
Unwrap the cloth before serving.
